In the summer of 2019, a down-to-earth, fine dining experience in the heart of Bayfield, Colorado was created. Mill Street Bistro is dedicated to providing farm-to-table cuisine with healthy portions and local ingredients. Stop by after work to enjoy a glass of wine or craft beer during Happy Hour. Join us for a meal to celebrate a special occasion, or bring the whole family because your kids will love our mac and cheese! We are also available for custom catering events in our beautiful restaurant or on our garden patio.
Chef Kelsy Westwater completed her formal training at the Art Institute of Colorado, earning a culinary degree in 2008. While earning her degree, she had the opportunity to work as a stagier at the renowned Flagstaff House above Boulder, Colorado. Upon graduation, Kelsy returned to her roots in Birmingham, Michigan to serve as Head Chef of Peabody's Restaurant. There she worked alongside her family and successfully managed and innovated in the kitchen of the 277-seat historic "Old Barn" on Woodward Avenue. Eventually, the American West proved strong enough to lure her to Durango, where in 2015 she built Bounty for the Belly, a food truck and catering business. When not serving her trademark "fancy comfort" food to the lucky citizens of SW Colorado, Kelsy can be found playing hockey, skiing or fly fishing with her husband, Peter, or working on their farm outside of Bayfield.
Born and raised in Durango, Chef Peter Westwater has spent nearly 20 years honing his craft in the restaurant industry. The majority of his career has been spent at the Cypress Cafe and The Container at Ska Brewing. He enjoys the creative aspects of being in the kitchen and providing people with quality, delicious food. When not in the kitchen, Peter can be found in the mountains, the desert or on the river with his wonderful wife and their dogs.
